Bliss Balls  (nut free, gluten free, processed sugar free, dairy free)

Makes 40 Prep time 15mins Fridge

Uses: Kid’s & adults lunchbox treats, dessert, energy balls – so yummy!

You will need: food processor/thermomix, 1 teaspoon, tablespoon, measuring cups.

 

Ingredients

2 cups 300g pitted dates (dried)

2 cups 300g dried apricots (I use the brown ones with no preservatives)

2 tablesoons boiling water

½ cup quinoa flakes

1 cup organic desiccated coconut  (+½ cup for rolling balls in)

2 tablespoons melted coconut oil

2 teaspoons cacao (raw)

Method

  1. Place pitted dates, apricots & boiling water into food processor/thermomix. Add in all other ingredients and blend for 4 minutes on low speed until all ingredients are combined.
  2. Grab a teaspoon of mixture and roll into a ball.
  3. Roll in coconut.
  4. Refrigerate & devour!
